RELATIONSHIP BETWEEN DESTRUCTIVE AND NONDESTRUCTIVE COMPRESSION TESTS

Abstract:
The objective of the paper reported herein was to determine relationship between firmness characteristics measured by destructive and non-destructive compression tests of fruits. The rupture stress and the ratio of the rupture stress to the deformation as destructive and the coefficient of elasticity as non-destructive characteristic were analyzed. The forcedeformation curve and the penetration speed and the coefficient of elasticity versus ratio of the rupture stress to the deformation were analysed. Discriminant analysis was performed and the density functions of the variables were determined. Consequently the coefficient of elasticity was found to be suitable for the characterisation of the firmness of apples, apricots and tomatoes.
