Abstract:
Phenolic substances, a numerous and widespread group of natural constituents, are important to man because they contribute to organoleptic and physiological properties of plants, fruits and food products. This work describes a qualitative analysis of hazelnut phenolic compounds after acid hydrolysis by a non-destructive methodology. This methodology allows the separation of these compounds into classes of phenolic acids and flavonoids.
