TEMPERATURE PHYSICALLY AFFECTS APPLE TEXTURE

Abstract:
Texture is an important indicator of apple quality for many large international retailers, and is often objectively assessed with a penetrometer as firmness. To ensure firmness readings are accurate and comparable worldwide it is important that the effect of firmness measurement conditions are understood, especially fruit temperature. Blanpied et al., (1978) and Bourne (1982) found that firmness readings were greater from fruit measured at colder temperatures, yet Saltveit (1984) found no significant temperature effect. None of these studies incorporated the effect of storage time or ripeness, which could explain inconsistencies between studies. Our aim was to evaluate the physical effect of temperature and time in storage on firmness.
