Abstract:
The development and ripening process of two plum cultivars has been previously analysed and physiological differences related to ripening were found (Zuzunaga et al., 2000). Cv.
Santa Rosa exhibited a climacteric ripening pattern, indicated by the coincidence of physico-chemical changes related to ripening with the increase in ethylene production, while cv.
Golden Japan showed a non-climacteric ripening process, with very low ethylene production during ripening and the respiration rate constant (Leličvre et al., 1997).
