Abstract:
The purpose of this paper is to discuss the specific features of flavour analysis methods in plant breeding and breeding research with strawberry as an example. It is possible to create genotypes with highly variable aroma patterns by crossing varieties. To support the selection of high numbers of progenies with positive aroma properties, rapid flavour analysis methods are recommended. As an example of such methods the combination of head-space SPME with a mass spectrometric sensor was tested.
