Abstract:
The impacts of price, expenditure, and major consumer food safety concerns on the consumption of four food groups (fresh produce, red meats, poultry, and dairy products) are estimated for the United States for the period 1970–92. The linear approximate of an almost ideal demand system (LA/AIDS) is used for estimation.
The results indicate that, in general risk information associated with consumer food safety concerns has little impact on the budget shares of these food groups; food price and expenditures are the major determinants of food consumption.
