POSTHARVEST COMPARATIVE STUDY OF TWO CULTIVARS OF SAPODILLA (MANILKARA ZAPOTE L.) FRUITS

Abstract:
Fruits of two cultivars of sapodilla plants growing in Venezuela were picked at subjective physiological maturity (color and sensorial firmness). Some physical, chemical and physiological analysis were performed during postharvest at 25 +/- 3 Celsius degree and 60–70 % relative humidity. Total carotenoids were measured by Mc Collum method using hexane as a solvent. Tannins contents were obtained by Singleton and Rossi method and anthociannins by Fuleki and Francis method. Soluble solids were determined using an Atago refractometer and firmness with and ELE cone penetrometer. Respiratory activity was monitored by trapping carbon dioxide in 10 % NaOH solution. As expected during ripening, total chlorophyll and tannins decreased and total carotenoids, soluble solids and fresh weight were lost and softening increased, although the postharvest patterns were different in each cultivar. Both cultivars showed a climacteric respiratory behavior but suggesting differences in their postharvest behavior related to shelf life
