Abstract:
During the harvest period (from November to March), the head characteristic variations of three early Mediterranean cultivars ('Violetto di Sicilia', 'Violet de Provence' and 'Violet Margot') of globe artichoke (Cynara scolymus L.) were evaluated.
The plants, one or two years old, were grown in the field at Siracusa, Italy (36° 58' N, 15° 11' E, 48 m a.s.l.). The delay of maturation time caused a linear increase in head weight and width and a slight decrease in length on both 'Violet de Provence' and 'Violet Margot' and a linear decrease in head weight, width and length on 'Violetto di Sicilia'. The ratio length/width of head, weight receptacle/weight head and scape length, for the three cultivars, decreased with the delay of maturation from November to March.
