Abstract:
In experiments to study the effect of a 2-week storage on the total soluble solids (TSS), acidity and vitamin C content of two cultivars of watermelon, Sugar Baby and Top Yield, one group of the fruits was stored at room temperature, and the other group kept in an air-conditioned room (18–20°C). During storage the TSS of Sugar Baby decreased whilst that of Top Yield remained about the same.
There was some indication that fruits stored at 18–20°C contained higher TSS than those stored at room temperature (20–27°C). In both cultivars there was an increase in acidity during the first week of storage, and a slight drop during the second week.
Vitamin C content for both cultivars showed a decrease in the first and an increase during the second week of storage.
