Abstract:
Many biochemical and physiological changes occur during grape ripening. Among those, ADH, the terminal enzyme of the anaerobic metabolism, is induced at véraison. Its activity is related to the sugar content and the pH of the berries. From a molecular point of view, northern analysis showed that Adh transcripts, mainly expressed in the fruits, increased sharply at the onset of ripening. During fruit development, three Adh isogenes with different patterns are expressed. Blot experiments confirm that in grapevine Adh is coded by a small gene family. Molecular characterization of one of this gene GV-Adhl is presented, as well a phylogenetic analysis.
