Abstract:
Three chufa cultivars, were selected and characterized, based on quantitative traits that showed high heritability: leafy shoots per plant; length, length/width rate and unit weigth of tuber; tubers per plant; inflorescences per unit surface.

GA is characterized for its large size and unit weight of their tubers, the low number of leafy shoots, the low number of tubers per plant and the intense bloom. The large tuber is very appreciated as a fresh product.

AB produces small spherical tubers with high fat content, appreciated in the production of horchata, has a good tuber yield.

LA produces average size oval tubers with high fat content. It yields more and is appreciate in the production of horchata.

RAPD technique can be used for the characterization of chufa cultivars; it would improve the correct identification of cultivars in order to protect patent rights.
