Abstract:
A preliminary model that predicts the taste of fresh tomato fruit on the basis of simple instrumental measurements was validated with data of selected commercially grown varieties.
A good correlation between sensorial assessment and model prediction was found.
However, there was an overestimation of the taste at low sensorial taste levels.
