Abstract:
The Ctifl program of sensory evaluation of Charentais-type melons began in 1995 and led to a methodology based on a descriptive approach.
In 1998, this methodology was applied in the analysis of five reference cultivars in order to assess the changes in their organoleptic characteristics during storage.
The major changes were in texture, odor, and flavor.
As for changes that occur in the field, some cultivars remain constant during the harvest season and therefore preserve their organoleptic qualities.
Others show a significant drop in quality in later harvests.
