Abstract:
Polygalacturonase (PG) is the most studied cell wall hydrolases.
Both exo-PG (EC 3.2.1.67) and endo-PG (EC 3.2.1.15) were detected during the ripening process of mango.
The increase in exo-PG was highly correlated with ripening whereas endo-PG activity was constant.
Exo-PG was extracted from ripe mango mesocarp tissue.
The enzyme has the relative molecular weight of 66 k and 58 k as detected by SDS-polyacrylamide gel electrophoresis.
In Northern blot analysis, there was barely detectable signal with the PG probe.
