Abstract:
Fruit firmness a quality trait of particular importance for production and marketing of raspberries.
In breeding new raspberry cultivars worldwide it is a primary selection criterion.
A wide range of destructive techniques have been used in efforts to determine fruit firmness, all of which have given a high degree of variability in results.
This paper presents a brief review of assessment of fruit firmness in raspberry and the value of various techniques for determining the ability of fruit to withstand the physical impact during harvest, for storage and for fresh marketing.
These include: subjective evaluation, sonic testing, the use of the Burgess raspberry texture meter, Ametek force gauges, use of an Instron, slump testing and Impact Response Analysis.
