In bananas ethylene is considered the trigger of ripening.
Treatment of banana slices with inhibitors of the biosynthesis (AVG and cobalt ions) and action (silver ions) of ethylene have an effect on different aspects of ethylene production and ripening.
AVG is less effective in inhibiting ethylene production than in other fruits and does not inhibit ripening, cobalt and silver ions inhibit both ethylene production and ripening, even though silver is believed to act directly on ethylene action only.
The effects of the different inhibitors on ACC oxidase activity, ACC and Conjugated ACC content are discussed.
Treatment of banana slices infiltrated with inhibitors with exogenous ethylene show stronger effects than expected.
AVG inhibits endogenous ethylene production and cobalt ions inhibit induced respiration and ethylene production.
STS is less effective.
