INTERACTION BETWEEN PACKAGE AND TOMATO AS AN INSTRUMENT FOR PACKAGE SELECTION

Abstract:
In this paper we describe several packaging materials used in the food industry: metals (canned foods), plastics, glass and aseptic cartons. In the case of tomato products all of them are used. We discuss the different properties of these materials and the interaction process that occurs between them and the packed food: migration of packaging components (metals, monomers, additives, etc.) into the food, permeation of several substances from the environment through the packaging materials to the food, or from the food to the packaging materials (with loss of relevant food ingredients, like aromatic compounds), etc. Finally we suggest that a good method to study these migration process is the development and use of mathematical models.
