Abstract:
Polyethylene glycol-insoluble cell walls, total pectin content, neutral carbohydrate released from the cell walls, ß-galactosidase (EC 3.2.1.2.3.) and polygalacturonase (EC 3.2.1.6.7.) activities were determined in apples cultivars Jonica, Jonagored, Kovelit, Idared, Mutsu and Lysgolden during their storage at 4–6°C and 90% RH. The ultrastructure of apple tissue was also determined by scaning electron microscopy (SEM). There were differences between the activity of ß-galactosidase, polygalacturonase, pectin and neutral sugar content in apple cultivars.
Good correlation was found between the SEM structure and the chemical analysis.
