Abstract:
Three varieties of apple (Gloster, Jonagold and Idared) picked in October were used to study the relationships between water potential, compression tests and fruit quality during storage.
Compression tests were made on cylindrical samples of fruit flesh taken after three periods of storage in January, February and March.
Failure parameters like stress, strain and energy at three rates of deformation were determined.
For each sample water potential was also measured.
The results show that water potential may be an indicator of the physical state of apple fruit during storage.
