CHEMICAL AND TECHNOLOGICAL CHARACTERISTICS OF PLUM CULTIVARS

Abstract:
Analysis of the following characteristics has been carried - dry matter, fructose, glucose, saccharose and organic acids in the fruits of plum cultivars Stanley, Chachanska lepotitsa, Gabrovska, Strinava, Gouliaeva, Mirabella de Nancy, Althan reinclaude, Balvanska slava, Nevena and Kyustendilska sinia. Fruits of the cultivar Mirabella de Nansy surpassed those of the remaining 9 cultivars in respect to dry matter. The quantity of monosaccharides (glucose and fructose) predominated in the fruits of the cultivars investigated. This was particularly well expressed in cultivars Kyustendilska sinia and Strinava. Only in Mirabella de Nancy the values of monosaccharides and saccharose in plum fruits were almost equal. The total sum of sugars in fresh fruits ranged from 9.58% to 14.79%. Cultivars containing about 11–12% sugars predominated - Balvanska slava, Kyustendilska sinia, Stanley, Strinava, Althan reinclaude. The fruits of cultivars Gabrovska, Strinava, Balvanska slava and Nevena are suitable for canning industry.
