EVALUATION OF CONTINUOUS TIME - TWO SPECIES MODELS FOR QUANTIFICATION OF MIXED MICROBIAL GROWTH

Abstract:
During the last decade, many predictive models for microbial growth, which take into account the influence of temperature, pH and water activity, have been developed. An important factor which has not been included in many models is the influence of a background microflora. It is however generally known that the growth of a micro-organism as a pure culture can be substantially different from its growth in a mixed culture, due to microbial interactions. Such interactions may be of synergetic or antagonistic nature, resulting in enhanced or inhibited proliferation respectively. In particular the antagonistic interactions are of interest to food microbiology, since they represent a possible mechanism to control the level of pathogens in food products.

Because of the importance of interactions and the lack of suitable modeling techniques in the field of predictive microbiology to describe them, it is useful to explore the potential of models in other research fields to deal with interactions. This paper investigates a specific type of interaction models, namely, continuous time-two species models, for which the general expression can be written as:
