RESVERATROL CONTENT IN RED WINES OF VITIS VINIFERA VARIETIES AND INTERSPECIFIC HYBRIDS

Abstract:
The resveratrol contents of the wines of interspecific hybrids tolerant to fungal diseases and sensitive V. vinifera varieties have been examined in two vintage years. Among the wines of 1991 vintage, the resveratrol content of the wines of the fungal infection tolerant interspecific hybrids in several cases significantly exceeded the quantities measured in the wines of V. vinifera varieties. On the other hand, in the case of the wines of 1995 vintage the resveratrol content of the wines of the V. vinifera varieties exceeded that of the interspecific hybrids. These contradictory results suggest a substantial vintage dependency of the resveratrol content, which is possibly caused by the differences in Botrytis infection.

The examination of the influence of winemaking practices confirmed that the resveratrol content of wines increases in proportion to the increased duration of fermentation on the skins.

The colour intensity and the resveratrol content of the wines seemed to bear no relation to each other when wines of different varieties were compared. Yet, when different procedures were used to compare wines of the same variety, colour intensity and resveratrol content showed similar tendencies.
