DEVELOPMENT OF QUALITY CHARACTERISTICS DURING MATURATION OF APPLE FRUIT - MINERAL COMPOSITION

Abstract:
The evolution of chemical characteristics during apple maturation and prediction of storage potential from the mineral composition of premature fruits were studied.
The material was collected in seven orchards, located in southern Finland.
Apples of six cultivars (Samo, Raike, Jaspi, Red Atlas, Lobo and Åkerö) were harvested early (16–20 August) and normally (25 August - 6 October). The pH and soluble solids were higher in the juice of normally harvested apples, indicating the progress in the maturation.
There was a tendency for mean nutrient concentrations (N, P, K, Ca and Mg) to be slightly higher in early harvested apple fruits.
The results indicate that storage ability, especially of cultivars Samo, Jaspi, and Åkerö, require more calcium to overcome the calcium deficiency, and an imbalance in K/Ca ratio of the fruit tissues.
