ELECTRICAL IMPEDANCE METHODS FOR ASSESSING FRUIT QUALITY: AVOIDANCE OF ELECTRODE ARTIFACTS

Abstract:
When assessing fruit or vegetable quality by electrical impedance methods, it is necessary to avoid the influence of interfacial impedances between the electrodes and the tissue. I describe these effects, and consider methods for minimising or compensating for them. Compensated 3-electrode techniques suitable for use with currently-available impedance analysers, are presented. The techniques are illustrated by examples of their effectiveness at suppressing impedance artefacts with a novel tissue-probe and a non-invasive measurement. The superior speed and resolution of these methods are expected to be suitable for the useful development of non-invasive measurements.
