Abstract:
The peeling of potatoes, either by a knife, a special knife or a potato peeling machine produces unequal scrap in the form of potato skin.
This paper sets forward the conducting of comparative researches regarding the various types of potato peeling, and the possible savings of already produced potatoes.
The population in cities will throw away the peeled potato skin, while a farmer may use it as an addition to cattle food.
The research method, including the comparative analysis, points to the fact that potato scrap ranges from 0.5 to 30%. The maximum thickness of potato skin ranges from 0.5 to 6 mm.
Research work has included the use of knives of 0.4 up to 22 mm width.
Researches may be of high value for selectors, as they may direct to the type of potato and its corresponding skin, which might be offered to any market.
