MATURITY AND RIPENING CONCEPTS ON NECTARINES. A CASE STUDY ON 'NECTARED-6' AND 'INDEPENDENCE'

Abstract:
Studies were conducted to determine harvest maturity of Nectared-6 and Independence nectarine cultivars. Fruits were first classified according to their maturity characteristics and each class was clearly defined. Class I representing immature and class V overripe fruits, exact mature ones included in II and III to IV representing firm and eating ripeness. In the study, among such parameters as fruit size, respiratory behaviors, ground color, total chlorophyll, soluble solids, flesh firmness, combination of the last two parameters, titratable acidity and ripening characteristics were all tested. The combination of flesh firmness and soluble solids appears to be the most practically important method to determine maturity. Minimum harvest maturity for Nectared-6 starts at 12–13 lb. firmness and 12 lb. for Independence. When firmness is combined with soluble solids, 14–15 lb. firmness with minimum 11 % SS. at harvest is suitable for Nectared-6 whereas, 15–16 lb. firmness with 10.5 % SS is the minimum combination required to define minimum acceptable maturity for Independence.
