SUGARS AND ACID CONTENT INFLUENCE ORGANOLEPTIC EVALUATION OF FRUITS OF SIX STRAWBERRY CULTIVARS FROM CONTROLLED CULTIVATION

Abstract:
Strawberry fruits used were from soil cultivation in unheated plastic tunnel.
The following cultivars were examined: Elsanta, Honeoye, Kent, Kama, Real and Syriusz.
The fruits were sampled when they matured from commercial trade ripe to consumption ripe.
The quality of fruits was defined among other parameters by the total sugars and acid content.
The fruits were also organoleptic evaluated.
The overall assessment of the organoleptic evaluation correlated with the sugars : acid ratio in maturing fruit.
