Abstract:
Factors other than acetaldehyde that may reduce astringency in persimmon fruits are being identified.
This paper describes adhesion of tannins to flesh cell wall fragments as one such factor.
Soluble tannins of persimmon adhered to cell wall fragments, becoming insoluble, when mature fruit flesh was homogenized with or without water added.
Soluble tannins once made insoluble by adhesion to cell wall fragments could not all be made soluble without heat extraction with acid methanol.
Massage of intact fruit produced cell wall fragments, and breakdown of the cell walls released soluble tannins from the tannin cells.
The tannins adhered to cell wall fragments, becoming insoluble, and astringency of the flesh decreased without an accumulation of acetaldehyde.
