THE ALLIUM DEHYDRATED INDUSTRY IN ARGENTINA

Abstract:
Dehydrated Alliums are the main products among dehydrated industry, and represent more than 50 % of the total Argentinean production. Among the Alliums, onions are in de first place and garlic in the second taking into account produced volumes.

The varietal changes that took place since 1960 up to now allowed to increase the industrial yields from 5 to 15 % in onion dehydrated production. Information about dehydrated onion production and exports are given. From those figures it is possible to be optimistic for the coming years, in order to supply the regional market demand.

The garlic used for the industry comes from de fresh market discartes and it has 25 % of industrial yield. The variations in garlic prices do not allow to have continuity in its production, and it has incidence in the exports.

Leek dehydrated production is quite small, and it is destinated to the local soup market and ocassionaly it is exported to the regional market.

The actual production situation, the crop management practices and the relationships between growers and the industry are discussed.
