EFFECT OF DIFFERENT ECOLOGIES ON THE FAT CONTENT AND FATTY ACID COMPOSITION OF DIFFERENT PISTACIA VERA VARIETIES GROWN IN DIFFERENT PARTS OF TURKEY

Abstract:
Effect of different ecologies on the fat content and fatty acid composition of important Pistachio varieties grown in Turkey was studied. Samples of different varieties; Kirmizi, Siirt, Uzun and Ohadi were collected from Manisa, Aydin, Içel, Gaziantep, Sanliurfa and Ceylanpinar provinces where Pistachio nuts are grown.

Fat content and fatty acid composition of the same variety differed significantly in different ecologies. Palmitic (16:0) acid was the main saturated fatty acid followed by Stearic acid (18:0). In all varieties the sum of Oleic (18:1) and Linoleic (18:2) acids were found to be nearly the same, but with alternating ratio according to the varieties.
