Abstract:
During a three year experiment, the number of days for asparagus spears to reach harvest length (at approx. 22 cm) varied from 2–21 days at average daily temperatures ranging from 5–20°C.
Percentage dry skin fibre was closely and negatively correlated with temperature.
Percentage dry fibre increased sharply below an average daily temperature of 14°C. Below this temperature fibrousness was negatively correlated with spear diameter.
A dry skin fibre percentage of 0.25 appears to be the critical level above which consumers start to notice skin fibres.
Spears may then have to be peeled or butts have to be removed.
