CONTROLLED AND MODIFIED ATMOSPHERE STORAGE OF EGGPLANT (SOLANUM MELONGENA L.) FRUITS

Abstract:
Eggplant fruits were stored at 12°C and 90–95% RH for 42 days in air, in modified atmosphere (MA) using perforated and non-perforated LDPE and PVC bags, and in controlled atmosphere (CA) of 3% O2 + 3% CO2, 5% O2 + CO2, 5% O2 + 10% CO2. Fruits were evaluated at 0, 2, 4, and 6 weeks, both immediately upon removal fromstorega and after 3 days at 20°C. Various chemical and physical analyses sush as,titratible acidity, soluble solids, reducing and total sugar, starch, total ascorbic acid,weight loss and respiration rate were conducted during storage. External quality of fruits was also studied during shelf life. Rates of increase in soluble solids, losses of acidity, starch and ascorbic acid contents of air-stored fruits were higher than those stored in CA and MA. The starch, reducing and total sugar contents of fruits were slightly higher in CA and MA. The decomposition of carbohydrates slowed down in CA and MA storage. There were significant differences in weight loss between in air and MA or CA in all storage periods. Severe high CO2 injury developed in CA at 5% O2 + 5 % CO2. 2 weeks, while only moderate symptoms were observed at 5% O2 + 5% CO2. The better external quality was obtained from those stored in PVC or in CA at 3% O2 + 3% CO2. From these findings, it was concluded that eggplant fruits cv. Pala-49 can be held for 2 weeks in air or 3 to 4 weeks in LDPE bags and storage life can be extended up to 5 to 6 weeks by CA (3% O2 + 3% CO2) or PVC-wrapped treatments.
