STUDY OF TREATMENT WITH DIFFERENT ADSORBENTS ON SHERRY DRY WINE.

Abstract:
In the present work we have studied the removal of colour with several adsorbents and the evolution of the treated wine in contact with the oxigen of the air, with the aim to study its resistance to the browning.

Different samples of a Sherry Dry Wine have been treated with several adsorbent sustances and at different doses, following their evolution during a period of two years. The adsorbents used have been the following: 4 types of bleaching coal, 2 of potassium caseinate, 2 of casein, 2 of PVPP and 2 adsorbent resins. In the same way, two con- trol samples have been used, one treated with sodium bentonite and the other one without treatment. The doses of each adsorbent used were of 100, 500 and 2,500 mg/l.

The wine samples, with 10 liter volume each one, were treated with the suitable dose of each adsorbent and they were maintained in continous agitation during two hours with a power shovel agitator, afterwards sodium bentonite was added and it was left decant during 24 hours. Later, it was filtered by filtrante plate and stored in bottles of 0.75 liters covered with greasy cotton. The samples were periodically analysed, studying the colour between 380 and 700 nm.
