ANALYSES OF THE CHARACTERISTICS OF WINES FROM "DENOMINATION OF ORIGIN VALDEPEÑAS" AND "DENOMINATION OF ORIGIN RUEDA"

Authors:   I. Alvarez, J.L. Aleixandre
Abstract:
Day by day the wine market becomes more demanding. It requires that wines of a particular region or of a certain variety have a series of characteristics in common which allows them to differ from other wines. In this study we chose wines from two Spanish established wine regions or "Denomination of Origin". The object of the study was to establish that if the composition of the wines were similar it would allow us to characterize them as belonging to the same "D.O.".

In order to do this we chose 34 chemical components from 10 wines within the "D.O. Valdepeñas" made enterely from Airén grapes and 34 chemical components from 10 wines within the "D.O. Rueda" made from 60% Verdejo grapes.

The average results of the various chemical and chromatographic analyses, treated dith Variance Analyses, demostrated that the composition of "D.O. Valdepeñas" showed significants differences in the 10 wines studied. In the 10 wines of the "D.O. Rueda", 11 of the components studied (density, sugar, total acidity, volatile acidity, ashes, alcalinity ashes, ethyl propionate, hexil acetate, isobutil acetate, butanol, ethyl butirate) do not show significant statistical differences.
