Abstract:
'Pedro Ximénez' is the preferred cultivar in the zone Montilla-Moriles because of its excellent properties for producing a famous dry wine.
However, the increasing demand of young table wine requieres the search for alternative cultivars more suited to producing table wine.
We have realized a preliminar comparative study of grape ripening of foreigner ('French Colombard' and 'Chenin blanc') and Spanish varieties ('Airén' and 'Pedro Ximénez'). The parameters analysed were: grape weight, pH, acidity and sugar.
The results show significative differences between varietes.
Of particular interest are the higher acidity content in the foreigner varietes cultivated in the Montilla-Moriles.
