UDPG 7-O-GLUCOSYLTRANSFERASE ACTIVITY IN FLOWER EXTRACTS OF CHRYSANTHEMUM SEGETUM

Abstract:
As a rule, yellow colouration of flowers is provided by carotenoids. The yellow colour of Chrysanthemum segetum petals however, is mainly due to the presence of the 7 - glucosides of quercetin and particularly gossypetin which only differs from quercetin by a hydroxy group in the 8 - position of ring A (see Fig. 1).

While the biosynthetic steps to the formation of flavonols including quercetin are well established (Heller and Forkmann, 1988), A - ring hydroxylation in vitro has not been achieved. The presence of the 7 - glucosides of both quercetin and gossypetin in C. segetum petals suggests that 7 - glucosylation of simple flavonols possibly precedes A - ring hydroxylation. Thus, in context with the elucidation of the formation of gossypetin and its 7 - glucoside we studied first the glucosylation reaction.
