Abstract:
Potatoes are an extremely important food crop, as we know it in our world today. This implies that it has been less important. Only a few generations back the European culture depended mainly on cereals as main food crops. In its development potato is spreading around the world, and this is still going on.

This paper draws a picture of developments in potato production in Africa, with special emphasis on possibilities for low-cost potato processing techniques. In many African countries, there are good opportunities to take advantage of on-going developments in production and processing of potato.
