INFLUENCE OF CA STORAGE CONDITIONS ON CARBOHYDRATE CHANGES IN CARROTS

Abstract:
Different varieties of late maturing carrots were stored at 1.5°C, 98 % relative humidity and the following atmosphere treatments: 21.0, 16.0, 10.5, 5.0 and 2.5 % oxygen, each without carbondioxide. After storage periods of 56, 112 and 168 days the contents of glucose, fructose and sucrose were determined enzymatically.

Results: The relation between sucrose and monosaccharides was highest after storage in air. This ratio was distinctly lower at a lower content of oxygen.
