STORAGE OF VEGETABLES IN MODIFIED ATMOSPHERES (CA)

Abstract:
In CA-storage tests the different morphological vegetable structures did not show similar rates of conservation. The tests demonstrated relatively good results at leafy structures and sprouts (white and red cabbages, savoy cabbages, brussels sprouts). Promising were also stalks and corms (green leeks, fennel, kohlrabi), immature curds (cauliflowers) and vegetable fruits (tomatoes, cucumbers, sweet peppers).

Roots and bulbs (carrots, red beets, celeriac, scorconeres, onions) resulted in changing improvements through CA-storage conditions, and only in a few instances in a longer storage-life than in good conventional cool stores.
