Abstract:
Macadamia nuts from cultivars 344 (Kau), 508 (Kakea), 660 (keaau), 741 (Mauka) e 800 (Makai) grown, in two farms located in county of Taperoá (State of Bahia) and São Mateus (State of Espírito Santo) were evaluated.
The samples were placed in a chamber under circulation at maximum temperature of 45 C to reach kernel moisture content of 1.5%. Three sub-samples of 100 nuts from each cultivar and location were weighed and cracked individualy.
The nut and kernel weight, kernel recovery first grade kernel (72% oil content) and first kernel grade recovery (product of kernel recovery and first grade kernel recovery) were evaluated.
Cultivars 660 and 741 presented lower nut weight (± 5.0g) and kernel weight (1.5g) and values below 95% first grade kernel.
Cv. 800 obtained the highest kernel weight (± 7.2g) and kernel (± 2.2g) and over 95% first grade kernel.
Cv. 508 obtained the highest value for kernel recovery (34.4%). The values of first grade kernel recovery varied in Taperoá from 20.1% (‘741’) to 33.9% (‘508’) and in São Mateus from 26.1% (‘344’) to 30.9 (‘660’).
