EFFECT OF PRECOOLING METHODS ON ASPARAGUS QUALITY

Abstract:
Time-temperature relationships were determined for asparagus precooled commercially using hydrocooling, room cooling and forced-air cooling. The cooling efficiencies of three precooling methods on asparagus quality were compared after simulated shipment. The effect of hydrocooling with and without chlorination on asparagus quality was also evaluated.
