THE INFLUENCE OF LOW OXYGEN CONCENTRATION DURING STORAGE ON METABOLICAL PROCESSES IN APPLES

Abstract:
Results of investigations regarding the influence of very low oxygen concentrations on some metabolical processes of four apple cultivars: Idared, Golden Delicious, Jonathan, Starkrimson during storage are presented.

Very low oxygen concentration (0,5 %) determined an inhibition of respiration, ethylene production, peroxidase activity and an increase of optical density given by alfa-tocoferol and its isomers. The increase of temperature from 0–1 °C to 3 °C led to the increase of respiration, ethylene biosynthesis, peroxidase activity, tissue conductivity and produced fruit maturation.

Even if the temperature increased, the lower changes occurred in very low oxygen concentrations.
