Abstract:
Italy is known to be the major fruit producer among EC countries.
From here, the need arises of developing more and more up-to-date, as well as enhanced storage technologies.
The centres for fruits and vegetable storage and processing number about 700, with a total refrigerating capacity of more than 9 million cubic metres, and with the possibility of storing 70 % of the production of long term storage fruits (apples, pears, kiwifruit).
Controlled atmosphere (CA), an enhanced technique deriving from normal atmosphere (NA) refrigerating techniques, in which, besides temperature, the concentration of oxygen and carbon dioxide in the air is controlled, has spread in Italy since 1959, reaching over a 30 year period a storage capacity of 4.5 million cubic meters.
The equipment needed in order to obtain CA constitutes inert atmosphere generators, carbon dioxide adsorbers, ethylene scrubbers and gas analyzers, besides a good gas tightness.
