THE IMPORTANCE OF PACKAGING AND MODIFIED ATMOSPHERE IN MAINTAINING THE QUALITY OF CULTIVATED MUSHROOMS (AGARICUS BISPORUS L.) STORED IN CHILL CHAIN

Abstract:
The authors investigated the storage of cultivated mushrooms in film pouches with different perforated surfaces and in MAP (1 20 % CO2 + 4.4 1% O2 + N2) for 7 days at 5 °C. The quality of mushrooms was the most favourable in film pouches with perforations involving 3 % of the surface. The marketability of mushrooms stored in MAP was almost similar, anaerobiosys did not occur although the flavour was slightly unfavourable.
