OPTIMIZATION OF THE SIMULTANEOUS QUANTIFICATION OF ACIDS AND SUGARS AS THEIR SILYL(OXIME) DERIVATIVES BY GC/MS

Abstract:
A fast, simple method is presented for the simultaneous quantification of organic acids, sugars and sugar alcobols, (from one solution, by one injection), (present in plants, fruits and vegetables), measured as their trimethylsilyl(TMS) ether/ester and/or TMS-oxime derivatives by GC, as well as by GC/MS. The practical utility of the method has been characterized (i) by the presentation of the composition of 12 strawberries gathered at different levels of ripeness, (ii) by the determination of the changes of the sugar, sugar alcohol and organic acid content of six apple varieties under storage, etc.
