POSTHARVEST MEMBRANE PERMEABILITY OF APPLE

Abstract:
A hypothesis of changes in the cell wall-membrane complex in apples during storage has been described: after harvesting the ion-leakage increases in the cell wall-membrane complex. It is caused by the decay of the middle lamella and increases in vesicle size and number. In the later period changes in the fibrillar structure of the cell wall and the intosusception of oligocarbohydrates block the ion channels. They inhibit free ion-leakage and cause a decrease of permeabitity. This hypothesis has been confirmed by measuring ion leakage (conductometric and flamephotometric method), pectin content and firmness in Jonagold apple.
