Abstract:
The ripening of nectarines was monitored during storage under different conditions of temperature and relative humidity.
Weight loss and firmness changes were measured to characterise the ripening of a fruit.
The firmness was measured non-destructively with the acoustic impulse response technique.
The test was evaluated for nectarines by comparison with a destructive quasi-static parallel plate compression test on fruit specimens.
A model to predict the weight loss by temperature and relative humidity conditions during storage was derived.
