INFLUENCE OF CULTIVARS ON THE COMPOSITION AND QUALITY OF OLIVE OIL.

Abstract:
A research on different olive cultivars (Olea Europea L.) growing in the center of Italy was carried out to evaluate the oil characteristics. The fruits of different cultivars were collected at the end of the upward part of oil accumulation curve, between the last ten days of November and the first ones of December. The oil extraction was obtained by pilot plan consisting of a hammer mill, an oil press and a settler. We analyzed both acid and phenolic composition and the volatile components of oils. From these analyses, we obtained a global quality index showing the excellent characteristics of the oil from the examined cultivars.
