| Abstract:
The research was carried out with four olive cultivars ('Arbequina', 'Picual', 'Empeltre' and 'Morrut') in three collections (Olesa, Reus and Tortosa), located in different growing areas of Catalonia (Spain). The study included three consecutive crops: 1990, 1991 and 1992. The assessment of the extracted oil quality was carried out regarding two analytical criteria: fatty acid composition and oxidative stability. The results showed that percentages of palmitic, oleic and linoleic acids and oxidative stability, present significant differences between cultivars, locations and their interactions. 'Piscual' oil has a more stable acidic composition than 'Arbequina', 'Empeltre' and 'Morrut' oils when they are grown in different environments. | |
