Abstract:
The quality characteristics of olive oil derive from the concomitant action of agronomic and techological factors. The relationship between water stress and physiological state of the plant is well known, while the relationship between climatic aspects and olive oil quality is not known.

In this work the effects of heat accumulation and rainfall during the growing and ripening of the fruit and some analytical parameters of olive oil quality have been investigated.

The results show that the climatic conditions, in particular the rainfall trend during the growing and the ripening of the olive fruits, influence the quality of the olive oil. The compounds mainly modified are some constituents of aliphatic alcohols, head-space and phenols.
